There’s something very British about banoffee pie. Or maybe it’s because I fell in love with banoffee pie when I was in London…
Either way, the combination of caramel, banana and cream when it melts in your mouth is heaven.

I ended up using a salted caramel recipe instead, and I coated the rim of the buttersnap cookies with 100s and 1000s using melted chocolate to give it some extra flair.
Try and limit yourself to one tart… I dare you!
