This dessert idea came out as an accident. I didn’t have time to make white christmas ice cream from scratch for a morning tea.
So I went to the supermarket, got a 1 litre tub of vanilla ice cream, let it soften and ribboned through pistachio nuts, coconut, shaved white chocolate and sultanas. Then I refroze this creation.
Then I melted down white chocolate and added rice bubbles and coconut, layed it on a baking tray and put it in the fridge. After it set, i chopped it up into random slabs and shapes.
Plating up was easy, one scoop of the ice cream, slab of the rice bubble slice, sprinked some coconut, pistachio and sultanas on top and the reaction was great. Thankfully the ice cream tastes great as well.
I love white christmas, but I think this brings it to another level.
