cornflake cookies!

Cornflakes are underrated as a cereal. In fact, I could eat cornflakes straight from the packet today. Do people still eat cornflakes or is it considered unhealthy to do so?

Back to the cookies… I loved cornflake cookies as a kid. I’m not sure if it’s Australian but it feels very Aussie. This is a slight update on the original CWA recipe and I added some white chocolate pieces and orange peel. Once again, it’s my obsession with orange that is recurring throughout this blog but it’s my blog and I’ll bake what I want, when I want and how I want.

The cakey feel of the cookie, with the sweetness of the fruit, with the decadence of the white chocolate, followed by the crunch of the cornflakes make this a nice accompaniment to your morning coffee.
