An update on a classic Australian kids birthday party food – frog in the pond.

Traditionally, it’s a freddo frog stuck in a jello cup (preferably green or blue).

I’ve updated it for the adults who still love to feel like kids sometimes. Instead of the frog being in a pond, the frog is in a swamp. Basically it’s a crunched up biscuit base, with a chocolate mousse, a bit of berry coulis and topped with a chocolate frog. I used mint to decorate.

In my humble opinion, Haighs does amazing chocolate and their signature treat is their chocolate frog.
